Fazoli’s is a regional QSR Italian concept with 280 +
units based out of Kentucky.
Challenge
Fazoli's executive leadership sought out The Culinary Edge
to revitalize the Italian QSR concept's menu offering and to create a
new product pipeline to drive frequency and reach new customers for
the brand.
Solution
Based on an understanding of the Fazoli's brand, points of
difference and operational constraints, the team created new menu
items that offered fresh and new dishes that drove sales and
excitement on the menu. In this opportunity the culinary team smoothly
integrated with the Fazoli's vendor network to bring new and refined
manufactured ingredients to life in a short time frame.
As part of the process, The Culinary Edge also played a lead role in the consumer research around the concepts. TCE designed screeners for the new LTO ideas (limited time offers) and implemented the research online with Fazoli's restaurant users. Results were resoundingly positive with 7 of the 11 tested concepts exceeding benchmark preference scores.
Results
In contrast to the previous decline in sales and perceived
menu stagnation, the core categories which launched new menu items
have seen revenue growth of more than 20% and more than 20 new menu
items have been rolled out system-wide.
