Sweet Flour Bake Shop is bringing warm delicious cookies your
way in just two minutes. Customers choose their doughs and mix-ins to
create their own baked to order cookie in under 2 minutes.
Challenge
The Culinary Edge team set out to create a differentiated
concept that brought together key elements of the traditional bake
house with its inviting visual display and smell of warm cookies with
the fun and excitement of the yogurt and ice cream store visual and
and customizable mix in bars.
Solution
Hitting the quick time service window was the biggest
challenge. The team worked to conceptualize, test and develop a
product platform and baking program that leveraged Turbo Chef Ovens.
Cookie doughs and oven cooking processes were formulated and optimized
for the 2-minute blast of heat waves delivered by the rapid cook oven.
New technologies aside, The Culinary Edge’s innovation team understood that the concept needed to create credible and defensible points of difference that would establish the new brand’s authentic “bakeshop integrity.” The team created a menu that would allow guests to order warm cookies fresh out of the oven to “grab and go” or to customize their order by picking a favorite cookie, and adding any mix-ins of their choice.
In order to extend the brand reach, TCE also created an “A.M. addiction” by designing customized muffin tops also baked to order, paired with a local specialty coffee program that delivers Toronto’s best espressos, cappuccinos and lattes.
Results
Since opening, Sweet Flour Bake Shop has had lines out the
door and in its first 12 months the concept has had over a dozen local
and national pieces of press coverage (TV, print and web). See what
