The Challenge.

How do you take a grocery store into the food hall space? 
With a background in the grocery business, our client sought to enter the food hall space with a unique hybrid concept, pairing retail, fast-casual dining, coffee shop and bar, enticing millennials and young families at every time of day.

The insight.

We sought to create a third space where guests could have shared moments gathered around food. We needed to create an experience design that was cohesive and destination-driving, that still allowed each outlet of the food hall to have a unique identity and promise.

The solution.

We created distinct outlets that fulfill guests’ needs through each daypart, ensuring that every platform could win on its own within its consideration set. Simultaneously, we designed moments of interconnectedness, transforming the discrete foodservice outlets into a place of togetherness, elevating the entire space from a place to buy, into the place to be. 

The outcome.

We conceptualized multiple distinct foodservice outlets that together create a space to gather: The Buzz, coffee by day wine by night; The Plant Butcher, fresh grab & go; The Stack-Up, classic soup and sandwich; The Hearth, pizzas and meals from the wood-fired oven; and Gohan, Japanese comfort food for here or to go.

Dom’s Kitchen and Market opened in June 2021 and has been so successful in their flagship market that plans are already underway to open 10 more units by 2025.
